    Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium heat until shimmering. Add the diced onion, red bell pepper, and jalapeño. Sauté, stirring occasionally, until the vegetables are softened and the onion is translucent, about 5 minutes.

    Add the minced garlic, chili powder, ground cumin, smoked paprika, and dried oregano. Stir constantly until fragrant, about 30 seconds.

    Stir in the tomato paste and cook for 1 minute, stirring frequently, until it darkens slightly.

    Add the crushed tomatoes, drained and rinsed beans, and vegetable stock. Stir to combine, scraping any browned bits from the bottom of the pot. Bring the mixture to a boil over high heat.
