Vegetable Fried Rice

Method

    Stir-frying

    Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat until shimmering. Pour in the beaten eggs and scramble them quickly until just set but still soft, about 30 seconds. Transfer the eggs to a plate and set aside.

    Add the remaining 1 tablespoon of vegetable oil to the wok. Add the onion, carrot, and the white parts of the scallions. Stir-fry for 2 minutes until the vegetables are slightly tender and fragrant.

    Add the garlic and ginger and stir-fry for 30 seconds until aromatic, being careful not to burn them.

    Add the cold rice, breaking up any clumps with a spatula. Stir-fry for 2-3 minutes until the rice is heated through and coated with oil, and some grains begin to toast.

    Add the peas, soy sauce, sesame oil, salt, and pepper. Stir-fry for 1 minute until everything is well combined and the rice is evenly colored.

    Return the scrambled eggs to the wok and add the green parts of the scallions. Toss everything together for 30 seconds until the eggs are broken into small pieces and the scallions are wilted.
