Teriyaki Chicken Rice Bowl

    In a small bowl, whisk together soy sauce, mirin, sake, sugar, ginger, and garlic until the sugar dissolves. Set aside.

    Rinse the jasmine rice in a fine-mesh strainer until the water runs clear. In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand covered for 5 minutes. Fluff with a fork.

    Heat vegetable oil in a large skillet over medium-high heat until shimmering. Add chicken pieces in a single layer and sear without moving for 3-4 minutes until golden brown. Flip and sear the other side for 2-3 minutes until browned on all sides.

    Pour the teriyaki sauce over the chicken. Reduce heat to medium and simmer for 5-7 minutes, stirring occasionally, until the chicken is cooked through and the sauce begins to thicken slightly.

    Stir the cornstarch slurry into the skillet. Cook for 1-2 minutes, stirring constantly, until the sauce is glossy and thick enough to coat the back of a spoon.

    Steam the broccoli and carrot: place them in a steamer basket over boiling water, cover, and steam for 3-4 minutes until bright green and crisp-tender. Remove from heat.

    To serve, divide the cooked rice among four bowls. Top with the teriyaki chicken and sauce, then arrange the steamed vegetables on the side. Garnish with sliced scallions and sesame seeds.
