    In a medium saucepan, bring the chicken stock to a gentle boil over medium-high heat. Slowly whisk in the cornmeal, reduce heat to low, and cook, stirring frequently, until the grits are tender and thickened, about 20 minutes. The grits should be creamy and pull away from the sides of the pan.

    Stir in the heavy cream, shredded cheddar, 1 tablespoon of butter, salt, and pepper into the grits until smooth and melted. Keep warm over low heat, adding a splash of water or broth if needed to maintain a creamy consistency.

    Pat the shrimp dry with paper towels and season with smoked paprika, cayenne, and a pinch of salt and pepper.

    Pan-frying

    In a large skillet, cook the chopped bacon over medium heat until crispy and the fat is rendered, about 8 minutes. Remove bacon with a slotted spoon to a paper towel-lined plate, leaving the fat in the skillet.

    Increase the heat to medium-high. Add the shrimp to the hot skillet in a single layer and sear until pink and just cooked through, about 2 minutes per side. Transfer shrimp to a plate, leaving any juices in the pan.

    Reduce heat to medium. Add the remaining 1 tablespoon butter, scallion whites, and garlic to the same skillet. Sauté until fragrant, about 1 minute, scraping up any browned bits.

    Stir in the lemon juice and 2 tablespoons of water, scraping the bottom of the pan to deglaze. Return the bacon and shrimp to the skillet, toss to coat in the sauce, and heat through for 1 minute. Season with salt and pepper to taste.
