
Shrimp Scampi with Angel Hair Pasta

Method

Bring a large pot of salted water to a rolling boil. The water should be salty like the sea.

While the pasta cooks, pat the shrimp dry with paper towels and season with 1 teaspoon salt and the black pepper.

In a large skillet over medium-high heat, melt 2 tablespoons of the butter with the olive oil. When the butter is foaming, add the shrimp in a single layer and sear for 1-2 minutes per side until they turn pink and are just opaque. Remove the shrimp to a plate.

Reduce the heat to medium and add the remaining 2 tablespoons butter to the same skillet. Add the minced garlic and red pepper flakes and sauté until fragrant, about 30 seconds to 1 minute. The garlic should be golden but not browned.

Reserve about 1 cup of pasta water, then drain the pasta well. Add the drained pasta to the skillet with the sauce, along with the seared shrimp and any accumulated juices. Toss everything together over medium heat, adding a splash of pasta water if needed to create a silky sauce that coats the pasta.

Remove the skillet from the heat and stir in the chopped parsley. Taste and adjust seasoning with additional salt if needed.
