
Shakshuka with Feta and Herbs
A classic Middle Eastern breakfast of eggs poached in a spiced tomato-pepper sauce, finished with creamy feta and fresh herbs. Perfect for a hearty brunch or weeknight dinner.

Method

Heat olive oil in a large, deep skillet over medium heat until shimmering. Add the sliced onion and red bell pepper, season with a pinch of salt, and cook until softened and lightly golden, about 8 minutes, stirring occasionally.

Add the minced garlic, ground cumin, and smoked paprika. Cook until fragrant, about 1 minute, stirring constantly.

Pour in the crushed tomatoes and season with salt and pepper. Bring to a gentle simmer, then reduce heat to medium-low and let the sauce bubble gently until thickened and slightly deepened in color, about 10 minutes. Taste and adjust seasoning.

Use the back of a spoon to create 6 wells in the sauce. Carefully crack one egg into each well. Sprinkle half of the crumbled feta over the sauce and eggs, being careful not to cover the yolks.
