
Shakshuka (Alternative)
A rich, spiced tomato and pepper stew with perfectly poached eggs, finished with fresh herbs and crumbled feta. This alternative version adds a touch of harissa-inspired heat and is perfect for brunch or a hearty dinner.

Method

In a large deep skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced onion and bell pepper, and sauté until softened and translucent, about 5 minutes. The onions should be fragrant and slightly golden.

Add the minced garlic, ground cumin, smoked paprika, and cayenne. Stir constantly for 1 minute until fragrant, being careful not to burn the garlic.

Add the crushed tomatoes, tomato paste, sugar, kosher salt, and black pepper. Stir well to combine, then bring the sauce to a gentle simmer. Reduce the heat to low and let it simmer for 10 minutes, stirring occasionally, until the sauce has thickened slightly and the flavors meld.

Taste the sauce and adjust seasoning with additional salt and pepper if needed. Make 6 small wells in the sauce using the back of a spoon. Carefully crack one egg into each well without breaking the yolk.

Cover the skillet with a lid and cook over low heat for 8-10 minutes, until the egg whites are set but the yolks are still soft and runny. The sauce should be bubbling gently around the eggs.
