
Salmon Teriyaki

Pat the salmon fillets dry with paper towels. Season both sides with kosher salt and black pepper.

In a small bowl, whisk together soy sauce, mirin, sake, sugar, grated ginger, minced garlic, and water until the sugar is dissolved. Set aside.

Heat vegetable oil in a large nonstick skillet over medium-high heat until shimmering. Place the salmon fillets skin-side down in the pan. Sear without moving until the skin is golden and crispy, about 4 minutes.

Carefully flip the salmon fillets. Sear the flesh side for about 2 minutes until lightly browned but still rare in the center.
