Red Lentil Coconut Curry

    Rinse the red lentils under cold water until the water runs clear. Set aside.

    Sautéing

    Heat vegetable oil in a large pot over medium heat. Add finely chopped onion and sauté until soft and translucent, about 5 minutes. The onion should be fragrant and slightly golden at the edges.

    Add minced garlic and grated ginger to the pot. Stir constantly for 1 minute until fragrant, being careful not to burn the garlic.

    Add tomato paste, garam masala, curry powder, turmeric, ground cumin, and kosher salt. Stir well to combine, cooking for 1 minute until the spices become fragrant and the tomato paste darkens slightly.

    Add the rinsed red lentils, coconut milk, and 500 ml hot water. Stir to combine, scraping up any browned bits from the bottom of the pot.

    Simmering

    Bring the curry to a gentle boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 25-30 minutes, stirring occasionally, until lentils are tender and the curry has thickened to a creamy consistency. The lentils should be soft and the sauce should coat the back of a spoon.

    Taste and adjust seasoning with salt if needed. If the curry is too thick, add a splash of water to reach desired consistency.

    Serve hot, garnished with chopped cilantro, with warm naan bread on the side.
