
Polenta with Mushroom Ragout

In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the sliced mushrooms and cook without stirring for 2-3 minutes until they start to brown, then stir and continue to cook until they release their liquid and become golden brown, about 8-10 minutes.

Reduce heat to medium, add the shallots and garlic. Cook, stirring frequently, until softened and fragrant, about 2 minutes.
