Method

Heat 1 tablespoon of vegetable oil in a medium skillet over medium heat. Cook the tortillas one at a time, about 30 seconds per side, until they are pliable and lightly golden. Transfer to a plate and keep warm.

In the same skillet, add the remaining 1 tablespoon of oil. Sauté the onion and jalapeño until softened, about 3 minutes. Add the garlic and cook until fragrant, about 30 seconds.
