Coq au Vin Blanc

A classic French braise of chicken simmered in white wine with mushrooms, pearl onions, and smoky bacon. Rich, comforting, and perfect for a cozy dinner.

Method

    Pat the chicken thighs dry with paper towels and season generously with kosher salt and black pepper on both sides.

    In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat until shimmering. Add the bacon lardons and cook, stirring occasionally, until browned and crisp, about 5 minutes. Remove with a slotted spoon to a plate, leaving the fat in the pot.

    Searing

    Working in batches to avoid crowding, add the chicken thighs skin-side down to the hot pot. Sear without moving until the skin is golden brown and releases easily, about 5-6 minutes per batch. Flip and brown the other side for 3-4 minutes. Transfer to a plate.

    Add the pearl onions to the pot and cook over medium heat, stirring occasionally, until lightly browned and slightly softened, about 5 minutes.

    Add the cremini mushrooms and cook, stirring occasionally, until they release their liquid and begin to brown, about 5-7 minutes. Season with a pinch of salt.

    Sprinkle the flour over the vegetables and stir to coat. Cook for 1 minute, stirring constantly, to remove the raw flour taste.

    Pour in the white wine, scraping up any browned bits from the bottom of the pot. Bring to a boil and let reduce for 2 minutes.

    Add the chicken stock, Dijon mustard, thyme sprigs, and bay leaf. Stir to combine. Return the chicken thighs and bacon to the pot, nestling them into the liquid. The liquid should come about halfway up the chicken; add a splash of water if needed.

    Bring to a gentle simmer, then cover the pot and reduce the heat to low. Braise until the chicken is tender and cooked through, about 35-40 minutes. The sauce should be slightly thickened and aromatic.

    Remove the chicken and vegetables to a serving platter with a slotted spoon. Discard the thyme sprigs and bay leaf. Skim off excess fat from the surface of the sauce if desired.

    Increase heat to high and boil the sauce rapidly until reduced and thickened to a saucy consistency, about 5-8 minutes. Taste and adjust seasoning with salt and pepper.

    Remove the pot from heat and swirl in the softened butter until melted and glossy. Return the chicken and vegetables to the pot, spooning the sauce over everything.
