
Classic Ratatouille
A rustic Provençal vegetable stew that's both hearty and elegant, featuring layers of summer vegetables simmered in a rich tomato-herb sauce.

Preheat oven to 190°C (375°F).

Arrange eggplant and zucchini slices on a baking sheet, brush both sides with 2 tablespoons of olive oil, and season with 1 teaspoon of salt. Roast until tender and lightly browned, about 20 minutes.

While vegetables roast, heat 2 tablespoons of olive oil in a large Dutch oven over medium heat. Add onion and cook until translucent, about 5 minutes.

Add minced garlic and diced red and yellow bell peppers to the pot. Sauté until peppers soften, about 3-4 minutes.

Stir in tomato paste and cook for 1 minute until it darkens slightly.

Add crushed tomatoes, thyme sprigs, remaining 1 teaspoon salt, and black pepper. Bring to a gentle simmer, then reduce heat to low and let simmer for 10 minutes to meld flavors.

Remove thyme sprigs from the sauce. Layer the roasted eggplant and zucchini slices over the sauce in a concentric pattern, slightly overlapping.
