Classic Potato and Cheese Pierogi

Method

    In a large bowl, whisk together flour and salt. Make a well in the center and add the beaten egg, melted butter, and warm water. Mix with a fork until a shaggy dough forms.

    Turn the dough onto a lightly floured surface and knead until smooth and elastic, about 5 minutes. The dough should be soft and slightly tacky.

    Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.

    Boiling

    While the dough rests, place the potatoes in a medium pot and cover with cold salted water. Bring to a boil and cook until fork-tender, about 15 minutes.

    Drain the potatoes and return them to the pot. Mash until smooth and set aside.

    Sautéing

    In a skillet, melt 2 tablespoons of the butter over medium heat. Add the chopped onion and cook, stirring occasionally, until soft and golden brown, about 8 minutes.

    Add the sautéed onions to the mashed potatoes along with the shredded cheddar, salt, and black pepper. Mix until well combined and taste for seasoning.

    On a lightly floured surface, roll the rested dough out to about 3mm (1/8 inch) thickness. Use a 7.5cm (3-inch) round cutter to cut out circles. Gather and reroll scraps.

    Place a heaping teaspoon of the potato filling in the center of each dough circle. Fold the dough over to create a half-moon and press the edges firmly to seal, ensuring no air pockets.

    Boiling

    Bring a large pot of salted water to a gentle boil. Working in batches, add the pierogi and cook until they float to the surface, then cook for 2 more minutes. Remove with a slotted spoon.

    Pan-frying

    Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the boiled pierogi in a single layer and cook until golden brown and crispy on both sides, about 3 minutes per side. Work in batches, adding more butter if needed.
