Classic Chicken Marsala

Method

    Place the chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness. Season both sides with salt and pepper.

    Dredge each chicken cutlet in flour, shaking off excess.

    Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear the chicken in a single layer (work in batches if needed) until golden brown on both sides, about 2-3 minutes per side. Transfer to a plate.

    In the same skillet, add the remaining 1 tablespoon of butter. Add the mushrooms and cook, stirring occasionally, until they release their liquid and start to brown, about 5-7 minutes.

    Add the shallot and garlic, and cook for another 1-2 minutes until fragrant.

    Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let it bubble and reduce by half, about 3-4 minutes.

    Stir in the chicken stock and heavy cream, and bring the sauce to a simmer. Let it cook for 2-3 minutes until slightly thickened.

    Return the chicken and any accumulated juices to the skillet, nestling them into the sauce. Simmer for 5-7 minutes, spooning sauce over the chicken, until the chicken is cooked through and the sauce has thickened to coat the back of a spoon.
