
Chicken Stir-Fry with Cashews

In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, honey, cornstarch, and water until smooth. Set aside.

Heat a wok or large skillet over medium-high heat. Add 1 tablespoon of vegetable oil. Add the cashews and toast, stirring constantly, until fragrant and lightly golden, about 2 minutes. Remove cashews to a plate.

Increase heat to high. Add the remaining 1 tablespoon of oil. Add the chicken pieces in a single layer; let sear undisturbed for 1-2 minutes until golden brown on the bottom. Then stir-fry until the chicken is just cooked through and no longer pink, about 3-4 minutes. Remove chicken to a bowl.

Add onion, bell pepper, and broccoli to the hot wok. Stir-fry until the vegetables are crisp-tender and slightly charred, about 3-4 minutes. The broccoli should be bright green and the onion translucent.

Add the garlic and ginger to the vegetables and stir-fry until fragrant, about 30 seconds.

Return the chicken and any juices to the wok. Pour the sauce over everything and stir-fry for 1-2 minutes until the sauce thickens and coats everything evenly. The sauce should be glossy and cling to the chicken and vegetables.
