Chicken Shawarma

Juicy, spiced chicken thighs marinated in a vibrant blend of Middle Eastern spices, then roasted until charred and tender. Serve in warm pita with garlic sauce for an authentic street-food experience.

    In a large bowl, combine yogurt, lemon juice, minced garlic, olive oil, cumin, smoked paprika, turmeric, coriander, cayenne, salt, and pepper. Whisk until smooth. The marinade should be thick and aromatic with a deep red-orange color.

    Add chicken thighs to the marinade and toss to coat completely. Cover and refrigerate for at least 1 hour or up to overnight. The chicken should be evenly coated and the marinade clinging to the surface.

    Preheat oven to 220°C (425°F). Line a baking sheet with foil or parchment paper. Arrange the marinated chicken thighs in a single layer, leaving space between them. The chicken should look glossy and spiced.

    Warm the pita bread in a dry skillet over medium heat for 30 seconds per side, until pliable and lightly toasted. The bread should be soft with slight golden marks.
