Chicken Enchiladas

Tender shredded chicken wrapped in corn tortillas, smothered in a rich red enchilada sauce and melted cheese. A comforting Mexican classic that's perfect for weeknight dinners.

    Poaching

    Place the chicken breasts in a large pot, cover with water by 1 inch, and bring to a boil over high heat. Reduce to a simmer and cook until the chicken is cooked through and reaches 165°F, about 15 minutes. Remove the chicken and let cool slightly, then shred with two forks.

    Sautéing

    While the chicken cooks, heat 1 tablespoon of vegetable oil in a medium saucepan over medium heat. Add the onion and cook until soft and translucent, about 5 minutes. Add the garlic and cook for 1 minute until fragrant.

    Toasting

    Stir in the chili powder, cumin, oregano, salt, and black pepper. Cook for 1 minute until spices are fragrant. Add the tomato paste and cook, stirring, for 2 minutes to deepen the flavor.

    Simmering

    Pour in the warm chicken stock and whisk until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce thickens slightly, about 10 minutes. Season to taste.

    Preheat the oven to 375°F (190°C). Spread a thin layer of sauce on the bottom of a 9x13-inch baking dish.

    Toasting

    Warm the corn tortillas in a dry skillet over medium heat, about 30 seconds per side, until pliable. Alternatively, stack them between damp paper towels and microwave for 30 seconds.

    Combine the shredded chicken with about 1/2 cup of the enchilada sauce and 1/2 cup of the shredded cheese. Mix well to combine.

    Fill each tortilla with a heaping spoonful of the chicken mixture, roll it up tightly, and place seam-side down in the prepared baking dish.

    Pour the remaining enchilada sauce over the rolled tortillas, spreading it to cover them completely. Sprinkle the remaining cheese over the top.

    Bake in the preheated oven until the sauce is bubbly and the cheese is melted and lightly golden, about 20 minutes. Let rest for 5 minutes before serving.
