
Chicken Empanadas
Golden, flaky empanadas filled with a savory, smoky chicken mixture with onions, peppers, and olives. A festive Spanish classic perfect for parties or weeknight dinners.

In a large bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Add ice water and bring together into a dough. Wrap and chill for 30 minutes.

Heat olive oil in a skillet over medium heat. Add onion and green pepper, cook until soft and fragrant, about 5 minutes.

Add chicken cubes and brown until no longer pink, about 5 minutes.

Preheat oven to 200°C (400°F). On a floured surface, roll dough to 3mm thickness. Cut into 12 cm rounds.
