Chicken Empanadas

Golden, flaky empanadas filled with a savory, smoky chicken mixture with onions, peppers, and olives. A festive Spanish classic perfect for parties or weeknight dinners.

Method

    In a large bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Add ice water and bring together into a dough. Wrap and chill for 30 minutes.

    Sautéing

    Heat olive oil in a skillet over medium heat. Add onion and green pepper, cook until soft and fragrant, about 5 minutes.

    Searing

    Add chicken cubes and brown until no longer pink, about 5 minutes.

    Simmering

    Stir in smoked paprika, cumin, oregano, tomato paste, and chicken stock. Simmer until thickened and flavors meld, about 10 minutes.

    Remove from heat, stir in chopped olives. Let filling cool completely.

    Preheat oven to 200°C (400°F). On a floured surface, roll dough to 3mm thickness. Cut into 12 cm rounds.

    Place a spoonful of filling in the center of each round. Fold dough over and crimp edges with a fork to seal.

    Place empanadas on a baking sheet lined with parchment. Brush tops with beaten egg.

    Bake until golden brown and crisp, about 20-25 minutes. Let cool slightly before serving.
