Bò Lúc Lắc (Vietnamese Shaking Beef)

Tender cubes of beef seared to a caramelized crust, tossed with a tangy lime-pepper sauce and served over crisp lettuce with tomatoes and red onions. A vibrant Vietnamese bistro classic that's surprisingly simple to make at home.

Method

    In a medium bowl, combine the beef cubes, minced garlic, oyster sauce, soy sauce, sesame oil, sugar, and black pepper. Toss well to coat. Let marinate at room temperature for 15 minutes while you prepare the other ingredients.

    In a small bowl, whisk together lime juice, fish sauce, and water. Set the dipping sauce aside.

    Arrange the lettuce leaves, tomato wedges, and red onion slices on a serving platter. Set aside.

    Cook the jasmine rice according to package instructions. Keep warm.

    Searing

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat until shimmering. Add the marinated beef in a single layer (work in batches if needed) and sear without moving for 2 minutes to develop a deep brown crust.

    Flip the beef cubes and sear the other sides for 2-3 minutes until browned on all sides but still pink in the center (medium-rare). The beef should feel springy to the touch.

    Transfer the beef to a plate and let rest for 5 minutes. Toss with the reserved lime-fish sauce mixture and scatter with scallions and cilantro.

    Serve the beef over the prepared lettuce platter with steamed rice on the side. Drizzle any remaining sauce from the plate over the beef before serving.
