Method

  1. 1

In a small bowl, combine the chili powder, ground cumin, smoked paprika, dried oregano, kosher salt, and black pepper. Set aside.

  2. 2
    Searing

Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 5 minutes. The meat should be crumbly and have a browned crust.

    Sautéing

Add the yellow onion and garlic to the skillet. Cook, stirring occasionally, until the onion is translucent and fragrant, about 3 minutes. The mixture should be aromatic and the onion softened but not browned.

    Toasting

Sprinkle the spice mixture over the beef and stir to coat. Cook for 1 minute until fragrant, stirring constantly to avoid burning.

  5. 5
    Simmering

Add the tomato paste and water. Stir well, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook until the liquid mostly evaporates and the mixture is thick, about 3 minutes. The beef should be well-coated and glossy.

Meanwhile, prepare the pico de gallo: in a medium bowl, combine the diced tomatoes, white onion, jalapeño, cilantro, and lime juice. Stir to combine and season with a pinch of salt. Set aside to let the flavors meld.

  7. 7
    Toasting

Warm the corn tortillas in a dry skillet over medium heat, about 30 seconds per side, until pliable and lightly charred. Keep them warm in a clean kitchen towel.
