
Baked Ziti with Sausage and Ricotta
A classic Italian-American comfort casserole: hearty ziti tossed with savory sausage, creamy ricotta, and a rich tomato sauce, then baked under a blanket of melted mozzarella until bubbling and golden.

Method

Bring a large pot of salted water to a rolling boil. Add the ziti and cook until just shy of al dente, about 2 minutes less than package instructions. The pasta should be firm and slightly undercooked since it will finish in the oven.

Drain the pasta in a colander, reserving about 1 cup of pasta water. Rinse briefly with cool water to stop cooking, then set aside.

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the Italian sausage, breaking it into small pieces with a spoon. Cook until browned and no longer pink, about 5 minutes. The meat should have crispy browned bits.

Add the finely chopped onion and cook, stirring occasionally, until soft and translucent, about 5 minutes. The onion should be fragrant and slightly sweet.

While the sauce simmers, preheat the oven to 375°F (190°C). In a large bowl, combine the ricotta, beaten egg, and grated parmesan. Mix until smooth and season with a pinch of salt.

Spread half of the ziti mixture into a 9x13-inch baking dish. Dollop half of the ricotta mixture over the pasta and gently spread it. Add the remaining ziti and dollop the rest of the ricotta on top.
