Authentic Greek Gyros

Tender, flavorful pork gyros with classic Greek seasoning, served with creamy tzatziki and fresh vegetables in warm pita bread. A homemade version of the beloved street food.

Method

    In a large bowl, combine the sliced pork, 2 tablespoons olive oil, lemon juice, minced garlic (4 cloves), oregano, cumin, paprika, salt, and black pepper. Mix well until the pork is evenly coated. Cover and refrigerate for at least 30 minutes (or up to overnight).

    Meanwhile, make the tzatziki: In a medium bowl, combine the Greek yogurt, grated cucumber (squeezed dry), minced garlic, chopped dill, and red wine vinegar. Stir until smooth. Season with a pinch of salt. Cover and refrigerate until ready to serve.

    Heat a large skillet or griddle over high heat. Add the remaining 2 tablespoons olive oil. Once shimmering, add the marinated pork in a single layer (work in batches if needed). Sear for 2-3 minutes without moving until browned on the bottom.

    Flip the pork slices and continue cooking for another 2-3 minutes until cooked through and slightly charred at the edges. The pork should be golden brown and aromatic. Transfer to a plate and tent with foil to keep warm.

    Toasting

    Warm the pita breads on a dry skillet over medium heat for 30-60 seconds per side until soft and pliable. Stack them on a plate and cover with a clean kitchen towel to keep warm.

    To assemble, place a warmed pita on a plate. Spread a generous spoonful of tzatziki down the center. Top with a portion of the cooked pork, then add tomato slices and red onion slices. Fold the pita around the filling and serve immediately.
