
Argentinean Beef Empanadas
Golden, flaky pastries filled with a savory mixture of spiced ground beef, onions, and olives. These empanadas are a beloved Argentinean classic, perfect for parties or a comforting meal.

In a large bowl, mix flour with 1 teaspoon salt. Add cubed butter and rub into flour with your fingers until mixture resembles coarse meal.

Add the 2 beaten eggs and cold water; mix until a shaggy dough forms. Turn out onto a floured surface and knead briefly until smooth. Wrap in plastic and refrigerate for at least 30 minutes.

Heat vegetable oil in a large skillet over medium heat. Add onions and green pepper; cook, stirring, until softened and translucent, about 5 minutes.

On a lightly floured surface, roll out the dough to about 3 mm thick. Cut out 12 cm rounds using a cutter or a small plate.

Place a generous tablespoon of filling (about 40 g) in the center of each round. Brush edges with beaten egg. Fold dough over to create a half-moon shape, pressing edges to seal. Crimp with a fork or traditional repulgue.

Place empanadas on the prepared baking sheet. Brush the tops with beaten egg.
